Coconut Macaroon’s

I had to share this recipe. They turned out quite delicious. I made them for my first ever cookie exchange. It’s on Saturday and I can’t wait to see the other tasty treats…
Preheat at 325*
14oz coconut
14oz can sweetened condensed milk
1 tsp pure vanilla extract
2 X-large egg whites at room temp.
¼ tsp kosher salt
Combine the coconut, milk, and vanilla in bowl. In the mixer beat the eggs and salt until medium firm peaks form. It took maybe a minute. Gently fold in coconut mixture into egg mixture. Use very small scooper and place on parchment paper.
Bake for 25 to 30 minutes
Brown edges are good. Let cool on pan for 1 minute and then slid the parchment onto cooling rack, let cool for 2 more minutes and then place directly on cooling rack.
YUMMY!!!! And really easy!!!! Enjoy
